If you like apple cobbler this recipe is for you! Even though it's zucchini, it tastes great! Ingredients:
4 cups zucchini, peeled and chopped |
2/3 cup lemon juice |
1 cup white sugar |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
4 cups all-purpose flour |
2 cups white sugar |
1 1/2 cups butter, chilled |
1 teaspoon ground cinnamon |
Directions:
1. In a large saucepan over medium heat, cook and stir zucchini and lemon juice until zucchini is tender, 15 to 20 minutes. 2. Stir in 1 cup sugar, 1 teaspoon cinnamon and nutmeg and cook one minute more. Remove from heat and set aside. 3. In a large bowl, combine flour and 2 cups sugar. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. 4. Stir 1/2 cup of butter mixture into zucchini mixture and mash the zucchini. 5. Press half of remaining butter mixture into bottom of a cookie sheet. 6. Spread zucchini mixture over top of crust, and sprinkle remaining butter mixture over zucchini. 7. Sprinkle with 1 teaspoon cinnamon and sugar. 8. Bake 35 to 40 minutes at 375, or until top is golden. Serve warm or cold. |
