Zucchini-Chocolate Chip Muffins

Low fat, low sugar, low oil muffins.
Ingredients:
3 cups whole wheat flour
1/2 cup sugar
1/2 cup splenda
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 egg
1/2 cup canola oil
1/2 cup applesauce
1/2 cup 1% milk
2 tbls lemon juice
2 tsp vanilla extract
2 cup zucchini
1 cup semisweet chocolate chips
4 tbls flax
Directions:
1. In a large bowl, combine whole wheat flour, sugar, splenda, baking soda, cinnamon, salt, and ground flax seed. In a medium bowl, combine egg, oil, applesauce, milk, lemon juice, and vanilla. Mix well. Stir wet ingredients into dry ingredients until just moistened. Fold in zucchini and chocolate chips. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees F for 20-24 minutes or until muffins test done. Great for freezing.
