Great Summer Cookies! Ingredients:
1 cup butter, softened |
2 cups granulated sugar |
2 eggs, beaten for 30 seconds |
1 teaspoon vanilla |
4 cups flour |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1 teaspoon salt |
2 cups zucchini, grated (drain in strainer for 1 hr. to remove extra liquid) |
12 ounces chocolate chips |
Directions:
1. Cream together sugar and butter. Mix in eggs and vanilla. In a separate bowl mix all dry ingredients together well and slowly mix into creamed mixture. Mix in zucchini with a slow mixer till blended inches Stir in chocolate chips. Using a teaspoon, drop onto greased cookie sheet or parchment lined cookie sheet and bake for about 7 minutes at 350 degrees F. |
