This is quite wonderful with the fresh herbs and the cheeses. Ingredients:
1 cup zucchini, grated and drained |
1/4 cup carrot, grated |
1 onion, diced |
1/4 cup fresh dill, chopped |
1/4 cup fresh mint, chopped |
1/4 cup fresh parsley, chopped |
1 cup cheddar cheese, grated |
1/2 cup feta cheese, crumbled |
1 1/2 cups flour |
3 eggs, lightly beaten |
salt and pepper |
Directions:
1. Combine first 9 ingredients in large bowl. 2. Add eggs and salt and pepper. 3. Place in a greased 9 pan. 4. Bake at 350 degrees for about 50 minutes. 5. Enjoy! |
