Got this recipe from an old friend and have been making it for almost 20 years. Every family dinner, holiday dinner and potluck, I am always asked to bring this dish. It has become a staple everywhere I go. There's never any leftovers - yes, it's that good! Best part is it's so easy to make. You can used ready to use, bagged shredded cheese if you're short on time. Ingredients:
6 cups sliced zucchini |
2 cups bisquick |
6 eggs |
1 cup oil |
2 cups grated mozzarella cheese |
1 1/2 cups grated parmesan cheese |
2 teaspoons pepper |
Directions:
1. Preheat oven to 350 degree. 2. Mix all ingredients in very large bowl until well blended. 3. Place in large casserole dish (it will expand, so leave room). 4. Bake covered for 1 hr., 15 minutes. 5. Remove foil and bake for an additional 15 minutes or until golden brown. |
