Easy to make side dish that never disappoints. Creamy and at the same time has a slight crunch to it. Can be made ahead because it freezes well Ingredients:
2 lbs zucchini |
1cup sour cream |
1 can water chestnuts |
1 stick of butter |
1 medium onion |
1 can cream of chicken soup |
2 oz jar of pimento |
1 pkg. corn bread stuffing |
Directions:
1. Slice zucchini into rounds and onion in to thin slices. 2. Fry both until slightly soften, drain and salt and pepper to taste. 3. Mix sour cream, soup and water chestnuts together then add zucchini and onion. 4. Melt butter to add to stuffing. 5. In 13 x 9 baking dish layer stuffing then zucchini mixture ending with stuffing. 6. Bake approx. 30 or until golden brown. |
