This was my Grandmothers recipe; it was a staple when my father was growing up and later when my sisters and I were growing up. The same dish can be made with spinach ether frozen or canned in place of the zucchini. Read more . You just need to make sure the spinach is well drained. This recipe will make enough for two. For larger groups just add more I don’t use more then two eggs regardless of how much I make. This is an “about” recipe all ingredients are about that measurement this is the first time I have put down exact measurements for this dish. Ingredients:
1 zucchini about 3/4 cup cooked and puréed |
12 soda crackers |
1/4 cup of cheese (cheddar, colby, or a combination with monterey jack) |
1 raw egg |
1 pinch of black pepper |
Directions:
1. Puree the cooked Zucchini or mash with a fork 2. Add the egg 3. Crumble the soda cracker with the zucchini mix well with a fork 4. Add cheese and pepper mix 5. Bake at 375 for 10 minutes it might take a bit longer the casserole should be firm, all cheese will be melted it should have a slight browning to the top. |
