Got this from a co-worker's Mom and use it especially in summer with all garden grown zucchinis from friends. Easy and yummy Ingredients:
2 lbs green an yellow zucchini (cubed) |
1 large chopped onion |
1/4 lb butter |
1 bag of cubed stuffing (14 oz bag) |
1 can cream of chicken soup (undiluted) |
1 (8 oz) sour cream |
2 tbsp cream or milk |
seasonings |
salt, pepper, garlic powder |
Directions:
1. Steam cubed zucchini and chopped onion till slightly tender 2. Melt butter and spread over bottom of 9 x 13 pan or 4 qt casserole pan 3. Spread 1/2 bag of cubed stuffing over butter 4. In a bowl mix cream of chicken soup and sour cream together with milk 5. Add seasonings 6. Add vegetables to bowl and mix 7. Pour over stuffing in pan 8. Add other 1/2 of bag of stuffing over veggie/soup mixture 9. Bake at 350 for 30 minutes or till bubbly and hot |
