Great for using up extra zucchini from the garden. This makes a tasty dish for brunch or a light supper served with a tossed salad. Ingredients:
3 cups zucchini, sliced thin |
1 cup flour |
1 teaspoon baking powder |
1/2 cup onion, chopped |
1/2 cup cheese, shredded |
1/2 cup vegetable oil |
1 teaspoon salt |
1 dash pepper |
4 eggs, beaten |
Directions:
1. Preheat the oven to 350 degrees Farenheit. 2. Mix all of the ingredients together and pour into 9 x 13 inch pan. 3. Bake for 35-40 mins until golden brown. |
