Tasty little fried cakes that are a great vegetable side dish. The cook time is just an estimate. It really depends on how many cakes you can get from the mixture. Ingredients:
2 lbs zucchini, grated |
1 tbsp parsley |
1/8 tsp pepper |
1 cup cracker crumbs |
3 tbsp parmesan cheese |
2 eggs |
1 onion, grated |
flour, to roll cakes in |
Directions:
1. Sprinkle grated zucchini with salt and let stand for 30 minutes in a colander. 2. Squeeze out water in kitchen towel. 3. Put zucchini in a bowl and add the remaining ingredients. Mix well. 4. Take one Tbsp at a time and form patties. Dip each patty into flour. 5. Fry patties in olive oil until golden brown. |
