This is a great recipe for 2 people! Easy to throw together and easy to make. I got the idea when I was making potato pancakes. Ingredients:
1 1/2 cups shredded zucchini |
1 egg, slightly beaten |
2 tablespoons bisquick baking mix |
3 tablespoons grated parmesan cheese |
1 dash salt and pepper |
1 tablespoon cooking oil |
Directions:
1. In a bowl combine zucchini, egg, Bisquick, cheese, salt and pepper. 2. Heat oil in skillet over medium heat; drop mix by 1/4 cupfuls and flatten. 3. Fry until golden brown, turn and cook on other side. |
