A great way to use up zucchini from the garden, especially if you have family members who don't like zucchini. This is the recipe my mom has always used. It's wonderful warm with a little butter spread on it. Ingredients:
2 eggs |
1 cup vegetable oil |
2 cups sugar |
1 tablespoon vanilla |
2 cups zucchini, grated |
3 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
4 teaspoons baking powder |
1 tablespoon cinnamon |
1 cup nuts, chopped |
powdered sugar |
Directions:
1. Preheat oven to 350°. 2. Mix the eggs, oil and sugar in a large mixing bowl. 3. Fold in the vanilla and zucchini. 4. Add the flour, salt, baking soda, baking powder and cinnamon; mix well. Stir in nuts. 5. Pout into 2 greased loaf pans; bake for 1 hour. 6. Dust with powdered sugar. |
