This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wells Estate in Canton, Texas in 1987. Ingredients:
3 cups grated zucchini |
1-1/2 cups granulated sugar |
2/3 cup applesauce |
3 cups flour |
1/4 teaspoon salt |
2 teaspoons baking powder |
2 teaspoons baking soda |
1/3 cup cocoa sifted |
3 teaspoons vanilla |
1 teaspoon coconut extract |
Directions:
1. Preheat oven at 350 then prepare rectangular baking pan with cooking spray and lightly flour. 2. In mixing bowl combine zucchini, sugar, applesauce, vanilla and coconut extract. 3. In another mixing bowl combine flour, salt, baking powder, baking soda and cocoa. 4. Mix wet ingredients with dry ingredients just until moistened. 5. Spread batter in prepared pan and bake 25 minutes. |
