This one recipe has enough difference to make it worth posting. It's modified from a Girl Scout Cook Book. The cinnamon makes a big difference and I like adding those special dark chocolate chips. Ingredients:
1/3 cup applesauce |
1 3/4 cups sugar |
2 eggs |
1 teaspoon vanilla extract |
2 1/2 cups all-purpose flour |
1/4 cup cocoa |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
2 cups shredded zucchini |
3/4 cup dark chocolate chips (optional) |
3/4 cup nuts (optional) |
Directions:
1. Preheat oven 325 degrees. 2. Greased a 9x13 baking pan. 3. Beat applesauce, sugar, eggs, vanilla till smooth. 4. Add next five ingredients; mix well. 5. Add zucchini. 6. Fold in nuts and chips (optional). 7. Spread into greased pan. 8. Bake 40-45 minutes. |
