Zucchini Bread With Strawberry Cream Sauce |

Yummy! Everyone had me make more! From the Lazurus cookbook. Good with or without the cream cheese sauce. Ingredients:
3 extra large eggs |
1 cup vegetable oil |
1 3/4 cup granulated sugar |
1 teaspoon vanilla |
2 1/2 cups fresh zucchini |
3 cups all-purpose flour |
1 teaspoon salt |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
strawberry cream cheese |
16 ounces cream cheese, softened |
2 tablespoons milk |
1/2 cup strawberry preserves |
Directions:
1. Bread: 2. Beat eggs in a mixing bowl. 3. Add oil, sugar, and vanilla. 4. Mix well. 5. Add zucchini. 6. Sift together dry ingredients, add to above mixture and lightly blend. 7. Pour into 2 greased loaf pans and bake at 350 degrees F for 45-50 minutes or until a cake tester comes out clean when inserted into the center of loaf. 8. Cream cheese sauce: 9. Place cream cheese in mixing bowl until smooth and creamy. 10. Add milk, blend. 11. Add strawberry preserves, mix well. 12. Allow to soften at room temperature before spreading. |
