This is one of the best zucchini bread recipes I have found. Everyone on my family loves it, especially when our garden has fresh zucchini. Ingredients:
1 cup vegetable oil |
2 cups sugar |
3 eggs |
2 cups raw zucchini |
2 cups flour |
1 teaspoon baking soda |
1 teaspoon salt |
1/2 teaspoon baking powder |
3 teaspoons cinnamon |
3 teaspoons vanilla |
1 cup chopped walnuts |
Directions:
1. Blend oil and sugar. 2. Add eggs and zucchini. 3. Sift dry ingredients together and add to the sugar mixture. 4. Add nuts and vanilla. 5. Bake in 2 loaf pans at 300 degrees for 1 hour. |
