Ingredients:
4 eggs, well beaten |
1 1/2 cups sugar |
1 cup vegetable oil |
3 1/2 cups all-purpose flour |
3/4 teaspoon baking powder |
1 1/2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 teaspoon ground cinnamon |
2 cups grated zucchini |
1 cup chopped pecans |
1 teaspoon vanilla extract |
Directions:
1. Combine eggs, sugar, and oil; beat well. Sift together dry ingredients; add to egg mixture, stirring until blended. Stir in zucchini, pecans, and vanilla; mix well. 2. Pour batter into 2 greased 8 1/2- x 4 1/2- x 3-inch loaf pans. Bake 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes, and remove from pans; cool completely. |
