With all those huge zucchini, of course Aunt Dawn had a zucchini bread recipe!! Servings size is loaves. Ingredients:
1 cup cannola oil |
1 3/4 cup sugar |
3 cups flour |
2tsp baking powder |
2 tsp baking soda |
1 tsp salt |
2 tsp cinnamon |
3 eggs |
2 cups zucchini (shredded) |
2 tsp vanilla |
1 cup nuts (pecans, walnuts) |
1 sm can crushed pineapple (drained) |
Directions:
1. Combine sugar & oil 2. Add eggs 1 at a time mixing well after each 3. Add vanilla, zucchini and pineapple 4. Mix dry ingredients and nuts. 5. divide between loaf pans and bake at 350 for 45-55 minutes |
