                    This recipe could also be made in a muffin tin. The recipe makes about 12 muffins. I suggest using a hand beater for this, so you don't get any flour clumps. The best way to enjoy these is to smear room-temperature cream cheese on top! Ingredients: 
                    
                        
                                                1 cup sugar  |  
                                                2 teaspoons cinnamon  |  
                                                2 eggs  |  
                                                1/2 cup vegetable oil  |  
                                                1/2 cup plain yogurt  |  
                                                1 teaspoon vanilla  |  
                                                1 cup grated zucchini  |  
                                                1 3/4 cups all-purpose flour  |  
                                                1 teaspoon baking soda  |  
                                                1 teaspoon salt  |  
                                                2/3 cup chopped walnuts (optional)  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Mix everything in large bowl. 2. Beat until everything is thoroughly mixed. 3. Pour into loaf pan. (No need to grease- 9x5 al.) 4. Bake 350 for 40 minutes. 5.
