This is a recipe that I think has been around for ages, but is so delicious!! Ingredients:
2 cups flour |
1 1/2 teaspoons baking soda |
1 teaspoon baking powder |
1 dash clove |
2 teaspoons cinnamon |
1 teaspoon salt |
1/2 cup oil |
1 1/2 cups sugar |
2 eggs |
1 teaspoon vanilla |
1/2 cup milk |
1 1/2 cups zucchini, grated |
1/2 cup raisins (boil a few minutes, less sticky ) |
Directions:
1. Stir together dry ingredients. 2. Combine oil, sugar, eggs and vanilla. 3. Add dry ingredients alternately with milk to sugar mixture. Stir in zucchini and raisins. 4. Turn into a greased 9x5-inch loaf pan. Bake at 350F until skewer inserted in the center comes out clean, about 65-75 minutes. 5. Cool in pan for 10 minutes; remove and cool. |
