This came from an old recipe book we had, but my mother made it even better by making a few of her own alterations to it. It's wonderful! (I make it without the raisins, but that's up to you) Ingredients:
3 cups unsifted flour |
1 teaspoon baking soda |
1 teaspoon salt |
3 teaspoons cinnamon |
1/4 teaspoon baking powder |
3 eggs |
2 cups sugar |
1 cup oil |
2 cups grated zucchini |
1 cup raisins (optional) |
2 teaspoons vanilla |
1 cup chopped nuts (walnuts or pecans preferably) |
Directions:
1. Beat eggs. 2. Add sugar and oil, mix. 3. Add dry ingredients. 4. Stir in raisins and nuts, then zucchini and vanilla. 5. Grease and flour the bottom of a 4x8x3 inch loaf pan. 6. Pour into loaf pan. 7. Bake at 350 degrees for 55 minutes (check after 45 mins.). |
