a lower fat version of basic zucchini bread. Can add nuts, chocolate chips or dates instead of apricots. Ingredients:
3 eggs |
1/2 cup oil |
1/2 cup applesauce, unsweetened |
1 1/2 cups brown sugar |
2 cups zucchini, chopped |
3 teaspoons cinnamon |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon baking powder |
3 teaspoons vanilla |
3 cups flour |
1/2 cup dried apricots, chopped |
Directions:
1. Preheat oven to 350 degrees. 2. Spray two 9X5 loaf pans with non-stick cooking spray. In a large bowl, mix all ingredients together until well blended. Bake 60 minutes until a skewer inserted in the center comes out clean. Let sit in pans for about 10 minutes, then turn out onto rack to cool before slicing. Makes 2 loaves. |
