I use half w.w. pastry and half unbleached flour. Ingredients:
3 large eggs |
3/4 cup sugar |
1 cup vegetable oil |
2 cups raw peeled, grated zucchini |
1 tablespoon vanilla |
3 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon baking powder |
3 teaspoons cinnamon |
1 cup coarsely chopped nuts |
Directions:
1. Combine first 5 ingredients in a mixing bowl and beat well. 2. Sift together dry ingredients then add to zucchini mixture and stir until blended. Add nuts 3. Pour into 2 greased 8 bread pans and bake for 1 hour in a 350 degree oven. |
