The traditional Zucchini bread that was made when I was younger just replace the sugar with splenda. Ingredients:
3 eggs |
1 cup splenda sugar blend for baking |
1 cup olive oil |
2 cups zucchini, grated |
3 teaspoons cinnamon |
3 teaspoons vanilla |
3 cups flour |
1 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
Directions:
1. Pre-heat oven 325 Degrees. 2. Cream eggs and Splenda. 3. Add oil, Zucchini and vanilla. Sift in remaining ingredients. 4. Pour into two greased loaf pans. 5. Bake at 325 degrees for 1 hour. |
