2 cups raw zucchini, grated |
1 cup unsweetened applesauce |
3/4 cup egg substitute |
3 teaspoons vanilla |
2 cups sugar |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
3 cups whole wheat flour |
1/2 cup flax seed meal |
1/2 cup natural bran |
1/2 cup pecans, chopped |
1/2 cup raisins |
Directions:
1. in large bowl add ingredients as listed stirring after each addition. 2. pour into 2 greased or sprayed bread pans. 3. bake in a 325 degree oven for 60 minutes or until inserted toothpick comes out clean. |
