From my collection of handwritten recipes 1960's. Ingredients:
3 eggs |
1 cup oil |
2 cups brown sugar |
2 cups zucchini, grated, raw, unpeeled |
3 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
1 tablespoon vanilla |
1 cup chopped nuts |
Directions:
1. Beat 3 eggs. Add oil, brown sugar and zucchini. Mix well. Stir in flour, salt and baking soda. Fold in vanilla and nuts. Pour into 2 greased and floured loaf pans (9x5x3). Bake in 350* oven 1 hour. Remove from pans and cool on rack. |
