Family recipe. Ingredients:
3 eggs, well beaten |
1 cup vegetable oil |
2 cups sugar |
2 cups zucchini, pealed and grated |
3 teaspoons vanilla |
3 cups flour |
1 teaspoon salt |
1/4 teaspoon baking powder |
1 teaspoon baking soda |
3/4 teaspoon nutmeg |
3 teaspoons cinnamon |
1 cup nuts, chopped |
Directions:
1. Preheat oven to 325 degrees. Grease and flour 2 loaf pans. 2. Mix together first 5 ingredients. Sift together and add remaining ingredients. 3. Pour evenly into both pans. Bake for 1 hour. 4. Hint: Alow to rest for 5 minutes, then remove from pans and place on baking rack until cool. |
