This one was handed down for generations and always receives top marks. The dark color of the bread surprises many and comes from the cinnamon. It is a hearty bread reminicent of the Old Country in Poland from which it originates. Enjoy. Ingredients:
3 eggs |
1 1/2 cups sugar |
2 teaspoons vanilla |
1/2 cup vegetable oil |
2 cups grated and drained zucchini |
2 cups flour |
1/4 teaspoon baking powder |
2 teaspoons baking soda |
3 teaspoons cinnamon |
1 teaspoon salt |
1 cup raisins |
1 cup chopped walnuts |
Directions:
1. In large bowl, combine eggs, sugar, vanilla, oil, and zucchini; beat well. 2. In small bowl, sift together flour, powder, soda, cinnamon, and salt. 3. Add to zucchini and mix well. 4. Stir in raisins and walnuts. 5. Pour into 2 greased and floured loaf pans. Don't overfill. 6. Bake at 375 F for about 1 hour or until toothpick comes out clean. 7. Cool 15 minute and then turn out onto racks to cook completely. 8. Freezes well. |
