From the Vegetarian Cookbook Ingredients:
3 eggs |
2 cups sugar |
1 cup oil |
1 teaspoon vanilla |
3 teaspoons cinnamon |
1 teaspoon salt |
1 teaspoon baking soda |
1/4 teaspoon baking powder |
2 cups grated zucchini |
3 cups sifted all-purpose flour |
1 cup chopped nuts |
Directions:
1. Beat together eggs until foamy 2. Add sugar,oil, and vanilla mix well. 3. Add Zucchini beat again. 4. Add flour and nuts mix well. 5. Pour into 2 greased and floured loaf pans. 6. Bake 350 F for 1 hour or until done. 7. Remove from pans and let cool. |
