What to do with all that left over zucchini? Try this wonderful recipe. Ingredients:
3 eggs |
2 cups sugar |
1 cup oil |
1 teaspoon salt |
1 cup chopped nuts |
2 cups grated zucchini |
3 cups flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1 1/2 teaspoons cinnamon |
2 teaspoons vanilla |
Directions:
1. Beat eggs and sugar together - slowly add oil and vanilla 2. Add all dry ingredients sifted together. 3. Fold in Zucchini and nuts. 4. Grease 2 loaf pans, dust with sugar or flour. Bake 1 hr at 350. |
