2 eggs |
1/2 cup vegetable oil |
3/4 cup sugar |
1 cup zucchini |
1 cup self-rising flour |
1 teaspoon vanilla |
1 1/2 teaspoons ground cinnamon |
1/2 cup chopped nuts |
Directions:
1. Boil zucchini in water till done. 2. Drain. 3. Beat eggs, add sugar and oil. 4. Combine all ingredients with zucchini. 5. Pour into a greased standard loaf baking pan. 6. Bake at 325 degrees for 55 minutes. 7. Makes 1 loaf. |
