Mom's recipe for zucchini bread. Once baked this freezes well to be used as gifts at Christmas time. Ingredients:
3 eggs |
1 cup oil |
1 1/2 cups sugar |
2 cups zucchini (peeled and grated) |
3 teaspoons vanilla |
2 cups flour |
2 teaspoons cinnamon |
1/4 teaspoon baking powder |
1 teaspoon salt |
1 teaspoon baking soda |
1/2 cup nuts (optional) |
Directions:
1. Beat eggs until light and foamy, add oil, surgar, zucchini and vanilla. Add flour, salt, soda, baking powder and cinnamon. Mix until blended. Add nuts. Divide into 2 loaf pans. Bake 325 degrees for 1 hour. |
