This recipe has been tweaked to be a healthy version of bread baking without losing any of the flavor or texture. I have not met anyone yet that has not asked for a second slice;) Ingredients:
2 mashed bananas |
1 cup applesauce |
2 cups white sugar |
2 1/2-3 cups grated zucchini |
2 teaspoons vanilla extract |
2 cups all-purpose flour |
1 cup wheat flour |
1 teaspoon nutmeg |
3 teaspoons cinnamon |
1 teaspoon baking soda |
1/4 teaspoon baking powder |
1 teaspoon salt |
3/4 cup chopped walnuts |
Directions:
1. 1)Preheat oven to 325 degrees. Grease & flour (2) 8x4 inch loaf pans. 2. 2) In a large mixing bowl mash bananas. Add applesauce & sugar, stir in zucchini & vanilla extract. In a separate bowl, combine flour, cinnamon, baking soda, baking powder, salt & nuts - stir into banana mixture. Divide the batter in the 2 prepared pans. 3. Bake for 60-70 minutes, the bread can come out gooey at 60 min., if you prefer spongier bread go for the 70 minute bake. |
