This zucchini bread is soooo good and moist. You've gotta try it. Ingredients:
4 cups shredded zucchini |
3 cups all-purpose flour |
2 1/2 cups sugar |
1 1/4 cups vegetable oil |
4 beaten eggs |
1 tablespoon vanilla, plus |
1 teaspoon vanilla |
1 tablespoon ground cinnamon |
1 1/2 teaspoons salt |
1 1/2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 cup nuts (optional) |
Directions:
1. Preheat oven to 325. 2. Grease generously bottoms of 2 loaf pans. 3. Blend all ingredients on low 1 minute. 4. Beat at medium speed 1 minute. 5. Pour into pans. 6. Bake 45-50 minutes until toothpick comes out clean. 7. Cool and Enjoy! |
