Zucchini slices wrapped with filling of lasagna style cassarole. Ingredients:
3 cups zucchini |
4 cups spinach leaves |
2 cups cottage cheese, low fat |
1 cup mozzarella, low fat |
1/2 cup parmesan |
1 egg |
1/4 tsp nutmeg |
26 oz pasta sauce |
1/2 lb lean ground beef, cooked |
1 salt and pepper to taste |
Directions:
1. Preheat ovent to 350degrees 2. Mix spinach, cheeses, egg and seasonings in large bowl. 3. Set 1/2 cup pasta aside. Mix remaining sauce with ground beef and pour into greased shallow casserole dish at least 10 inches in diameter. 4. Slice peeled zucchini into long lasagna style noodles. 5. Assemble bouquets, spread 2-3 tbsp of cheese mixure on each noodle and roll up. Place them seam side down in casserole dish. Drizzle remaining pasta sauce over each roll. 6. Cover and bake for 30 min. or until heated through. |
