Grilled zucchini stuffed with feta and onion! Ingredients:
2 medium zucchini |
1/4 cup crumbled feta cheese |
1/4 cup chopped sweet onion (vidalia or maui are best!) |
1 teaspoon dried mixed spice (garlic powder, oregano, basil, black pepper, and thyme) |
3/4 teaspoon olive oil |
Directions:
1. Slice zucchini in half long and clean out the seeds and soft insides with a spoon - leaving a shell at least 1/2 inch thick on all sides. They will look like canoes when cleaned. 2. Chop the seeds, etc., and mix well with feta, onion, dried spices, and olive oil, leaving salsa-sized chunks of feta. You may use a food processor but be sure not to over-mix as this creates an unpleasant consistency. 3. Coat both sides of zucchini with butter-flavored no-stick cooking spray (like Pam). 4. Spoon the mixture into the zucchini shells and place directly on the grill - medium heat. 5. Grill for about 12 minutes or until the shells are tender. 6. For presentation you may garnish with fresh herbs. Mangiamo! |
