Zucchini Bisque With Crabmeat |

A warm, creamy soup that stands up to using imperfect ingredients. Ingredients:
1 medium onion, diced |
2 tbsp butter |
3 medium zucchini, diced |
1 potato, diced |
5 c chicken stock |
1 sprig fresh thyme |
2 c heavy cream |
1/2 c lump crabmeat |
chives |
salt and pepper |
Directions:
1. Fry onion in butter until clear. 2. Add zucchini and potatoes, fry for a few minutes. 3. Add stock, thyme, and salt & pepper. 4. Simmer 30 minutes. 5. Transfer to a blender and blend until smooth. Return to the pot. 6. Add cream and crabmeat. 7. Bring to a boil, and serve. |
