Zucchini Beet Muffins Ingredients:
1 1/2 cups white flour |
1 cup oatmeal |
1/2 cup whole wheat flour |
1/2 cup brown sugar, lightly packed |
2 tsp baking powder |
2 tsp baking soda |
1/4 tsp salt |
1/2 tsp allspice |
1/2 tsp cinnamon |
1/4 tsp nutmeg |
1/8 tsp cloves |
1 egg |
1 cup skim milk |
1/2 cup apple sauce, unsweetened |
1/2 cup shredded beets |
1/2 cup shredded zucchini |
1/4 cup raw sunflower seeds, chopped |
1/4 cup walnuts, chopped |
Directions:
1. Preheat oven to 400 deg 2. stir together dry ingredients 3. Make a well in centre. 4. Beat egg, combine liquid ingredients 5. Add liquid to dry, and nuts and combine all 6. Spoon into muffin cups 7. Bake for 25 to 28 minutes |
