veggie sandwich Ingredients:
1 whole wheat english muffin |
3 oz zucchini |
1/4 c onion |
1/4 c monterey jack cheese |
1/2 t salt |
1/2 t pepper |
1 t olive oil |
3 fresh basil leaves |
Directions:
1. slice onion about 1/2 thick. Place onion in skillet with olive oil. when onion is sizzling and starting to brown. Turn onion slice over. Slice zucchini in ribbons. place in skillet with onion. Drizzel with olive oil. Lay english muffin in pan to toast. Place onion slice on one half of muffin. Top with browned, but still crunchy zucchini ribbons. Top with cheese and basil. Add muffin top. Flip the sandwich and cook until cheese is melted. |
