Zucchini Bars With Almond Cream Cheese Frosting |

These are a nice change from zucchini bread for making desserts with zucchini from your garden. Ingredients:

2 cups sugar |
1 cup oil |
3 eggs |
2 cups flour |
1 teaspoon cinnamon |
1 teaspoon salt |
1 teaspoon baking soda |
2 teaspoons baking powder |
1 teaspoon vanilla |
2 cups shredded zucchini |
1 small carrot, shredded |
3/4 cup rolled oats (or nuts) |
frosting |
1/2 cup softened butter or butter flavored shortening (to help hold up to the heat) |
1/4 teaspoon almond extract (a little goes a long way!) |
2 teaspoons vanilla |
2 1/2 cups powdered sugar |
1 package (3 oz.) softened cream cheese |
(you can thin the frosting down with some cream or milk) |
Directions:
1. Mix together oil and sugar, eggs and vanilla, mixing well. 2. Add dry ingredients and fold in zucchini, carrot and nuts. (note, if you sift the flour, you will get a much lighter, higher cakelike bar) 3. Pour into a greased and floured 9 x 13 pan. Bake at 350° for 30-35 minutes. 4. Blend frosting ingredients and beat till smooth. Frost bars when cool, and cut into desired sizes. Makes approx 20 servings. |
