A good summertime treat! Ingredients:
1/2-3/4 cup butter |
1/2 cup brown sugar |
1/2 cup white sugar |
2 large eggs |
1 teaspoon vanilla |
1 3/4 cups flour |
1 1/2 teaspoons baking powder |
1 pinch salt |
1 cup coconut |
3/4 cup chocolate chips or 3/4 cup walnuts |
2 cups shredded zucchini |
Directions:
1. Preheat oven to 350°. 2. Grease a 15 x 10 pan. 3. Cream butter until light, then beat in sugars. 4. Add eggs, one at a time. 5. Beat in vanilla. 6. Stir in flour mixed with baking powder and salt. 7. Add zucchini, coconut, and chips or walnuts. 8. Spread in pan and bake 40 minutes. |
