Vegan, high fiber, DELICIOUS Ingredients:
2 1/2 cups zucchini |
2 bananas |
1 cup canola oil |
3 cups flour |
2 cups sugar |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1 teaspoon vanilla |
1 cup ground walnuts |
1 cup semi-sweet chocolate chips |
Directions:
1. In medium sized mixing bowl, combine zucchini, bananas, oil, and vanilla. Stir well or beat with electric mixer. In large bowl combine all remaining ingredients except chocholate chips. Mix wet into dry until moist. Pour into bundt or bread pan. Bake at 350 for 45-60 minutes or until toothpick comes out clean. Cool upright for 15 minutes, then invert onto cooling rack for 30 minutes. |
