Ingredients:
2 pound(s) zucchini sliced and cooked |
4 eggs |
1/2 cup(s) milk |
1 pound(s) monterey jack cheese cubed |
1 teaspoon(s) salt |
2 teaspoon(s) baking powder |
3 tablespoon(s) flour |
1/2 cup(s) parsley chopped |
breadcrumbs |
butter |
Directions:
1. Cook zucchini and drain. 2. Mix eggs, milk, salt, baking powder, flour, parsley (if desired). Add some cheese. 3. Fold in cooked zucchini. 4. Grease a 9 x 13 baking dish and sprinkle with breadcrumbs. Pour in mixture. 5. Sprinkle desired amount of breadcrumbs on top of mixture and dot with squares of butter. 6. Bake at 350 degrees for 30 minutes. |
