A different twist for zucchini a real hit with any main course Ingredients:
5 eggs |
2/3 cup of cooking oil |
1 tbsp. parsley flakes |
1 tsp. onion powdert (i use 2 tsp.) |
1/4 tsp. salt |
1/4 tsp. pepper |
2/3 cup grated parmesan cheese |
1 and 1/4 cup chopped onion |
1 cup green or red pepper |
3 and 3/4 cups grated zucchini (unpeeled) |
1 and 1/4 cups tea biscuit mix |
Directions:
1. Beat eggs in mixing bowl until frothy 2. Mix in cooking oil, parsley, onion powder, salt and pepper 3. Stir in remainiing ingredients in order given 4. Pour into a shallow greased 9 inch casserole. 5. Bake at 350 for about 35 minutes 6. Serve hot with a side dish of salsa |
