Nice summer recipe with all that zucchini from your garden...easy, too. Baltimore Sun Ingredients:
1/2 cup chopped onion |
3 cups zucchini, peeled and shredded |
1/3 cup canola oil |
1 cup jiffy mix or bisquick |
1/2 cup grated cheese |
4 beaten eggs |
1/2 teaspoon italian seasoning |
Directions:
1. Preheat the oven to 350 degrees. Soften onion and zucchini in a bit of water, drain and saute 10 minutes. 2. Mix them with all the other ingredients and put into buttered casserole dish. Bake at 350 degrees about 25 minutes, to a golden color. This is almost like a quiche. |
