When you mix zucchini with tomatoes (and cheese), as in this easy dish, even people who dislike squash will find it tasty. On top of that, this is easy and lowfat/low calorie. Ingredients:
3 cups sliced zucchini |
1 chopped onion |
1 tablespoon vegetable oil |
1 teaspoon salt |
1 cup canned tomato |
2 ounces shredded cheese, if desired |
Directions:
1. Brown zucchini and onion in oil, cover and simmer 10 minutes. Add rest of ingredients and heat until cheese melts. |
