Zucchini and Spinach Casserole |

With lots of Vitamin A. Ingredients:
1 (10 ounce) package frozen chopped spinach |
1/2 teaspoon nutmeg |
2 cups zucchini |
2 tablespoons water |
1 teaspoon margarine |
1 teaspoon seasoning salt |
1/2 cup parmesan cheese |
1/2 cup swiss cheese |
Directions:
1. Preheat oven to 350°F. 2. Cook spinach according to package instructions. Drain; add nutmeg. 3. Slice Zucchini. 4. Grate Parmesan and Swiss (amounts in recipe for grated cheese). 5. Combine zucchini, water, margarine, and seasoned salt in skillet. Cover; steam for 5 minutes. 6. Mix Parmesan and Swiss cheeses. In 8-inch casserole, layer spinach, zucchini, and cheese. 7. mixture. Bake for 20 minutes. |
