Ingredients:
1 tablespoon olive oil |
1 large red onion, thinly sliced |
3 cloves garlic, minced |
4 medium zucchini, cut into rounds |
1 (8-ounce) can tomato sauce |
salt and pepper |
Directions:
1. In a large skillet, heat the olive oil over medium-high heat. Add the onions and garlic. Cook until the onions are tender, 3 to 4 minutes. Add the zucchini and cook until the zucchini is almost tender, 4 to 5 minutes. Stir in the tomato sauce and cook until the mixture is heated through. Serve immediately. |
