From Betty Crocker Fresh Spring Recipes. I like to add a few sprinkles of herbs to this simple dish. Ingredients:
1 medium zucchini, cubed |
1 (17 ounce) package white corn kernels, drained |
1/8 teaspoon salt |
1/8 teaspoon pepper |
1/2 cup cheddar cheese, shredded |
Directions:
1. Mix zucchini, corn, salt and pepper in 1-quart microwavable casserole. 2. Cover tightly and microwave on HIGH 5 to 7 minutes, stirring after 2 minutes, until vegetables are hot. 3. Sprinkle with cheese. 4. Let stand covered 1 minute. |
