A delicious combination of vegetables to serve as a side. I usually serve this with pork chops. Found on the internet Ingredients:
1 tablespoon olive oil |
3 cups (about 3 medium) zucchini, sliced |
1/2 cup red onion, chopped |
1/8 teaspoon (optional) red pepper, crushed |
1 1/2 cups loose-pack frozen whole-kernel corn |
1 cup (about 1 medium) seeded tomato, chopped |
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme, crushed |
salt and ground black pepper to taste |
Directions:
1. Heat olive oil in large skillet over medium-high heat. Add 2. zucchini, onion, and crushed red pepper; cook, stirring 3. occasionally, for 4 to 5 minutes or until vegetables are 4. tender. Stir in corn, tomato, and thyme; cook, stirring 5. occasionally, for 2 to 3 minutes or until heated through. 6. Season with salt and pepper. |
